Converting is not the same as renaming
When you convert a file, the tool decodes it from its current format and writes it out in the new one. Renaming only changes the label after the final dot; the contents stay exactly the same. That is why a renamed file often opens on your own machine but breaks when you send it somewhere stricter. A converter reads the bytes, so it works even on a file someone renamed by mistake. What happens to quality
Some conversions lose a little quality and some lose none. Moving between two compressed formats, such as AAC to MP3, re-encodes the file and drops a little detail each time, so it helps to keep your original. Converting from a lossless source, or repackaging a video without re-encoding it, keeps the quality intact. Each format page explains what to expect for that specific conversion.
